when I try to change the Default Country/State in the settings, it switches back immediately.

I cannot produce this issue. I suspect upgrading to the latest mojoPortal and the latest Event Calendar Pro will solve it for you.

Please upgrade to Event Calendar Pro 0.0.2.2, it should solve this issue.
